Thymus × faustinoi, known as summer thyme or Faustini thyme, is a compact, highly aromatic evergreen shrub prized for its flavour in French cuisine. Dark grey-green leaves and delicate clusters of pale pink flowers in summer form a plant to around 30cm high. One of the most flavourful thyme varieties available, noticeably sweeter and more complex than English thyme, making it the preferred choice for authentic French cooking. The finely textured foliage is perfect for harvesting fresh or drying.Summer thyme thrives in full sun and well-drained soil, preferring neutral to alkaline conditions. It is remarkably drought tolerant once established, making it ideal for gravel gardens, Mediterranean plantings and containers. Hardy to around -15°C, it survives most UK winters outdoors.Excellent in pots on a sunny patio or windowsill, or in a herb garden alongside rosemary and oregano. Requires minimal care: water moderately during the growing season and cut back lightly in spring to keep it compact and bushy.
